Ground Beef and Cheese Dip 🧀
Ingredients:
- 3 lbs ground beef
- 1 or 2 packets of taco seasoning (based on how much flavor you want)
- 1 or 2 cans of Rotel (10 oz each, drained — use one can for a milder flavor or two for more tomato and chili taste)
- 1 block of cream cheese (8 oz, cut into cubes — Great Value or your preferred brand)
- 1 cup shredded cheese (Mexican blend, cheddar, or Colby Jack, depending on your preference)
- ½ block of Velveeta cheese (8 oz, cut into cubes — the creamy texture helps bind everything together)
Optional toppings for serving:
- Sour cream
- Sliced jalapeños
- Chopped green onions
- Fresh cilantro
Directions:
- Preheat the oven to 350°F (175°C).
- Brown the ground beef:
In a large skillet, cook the ground beef over medium-high heat until it’s fully browned and no pink remains (about 8-10 minutes). Break up the beef as it cooks so you get small, bite-sized crumbles. - Add taco seasoning:
Once the beef is browned, drain any excess grease. Return the beef to the skillet and stir in the taco seasoning (follow the instructions on the packet; typically you’ll add water and simmer for a few minutes to blend the flavors). - Prepare the cheese mixture:
In a large mixing bowl, combine the cream cheese cubes, shredded cheese, and Velveeta cheese cubes. Stir in the drained Rotel tomatoes. - Combine the ingredients:
Add the seasoned ground beef into the cheese mixture. Stir everything together until well-mixed. This step ensures that the cheese starts melting and blends with the beef and Rotel. - Transfer to a baking dish:
Pour the beef and cheese mixture into a greased 9Ă—13-inch baking dish. Spread it evenly with a spatula or spoon. - Bake:
Place the dish in the preheated oven and bake for 15-20 minutes, stirring once or twice during cooking to help the cheese melt evenly. The dip should be bubbly and fully melted. - Garnish and serve:
Once out of the oven, give the dip a final stir. If you like, sprinkle with extra shredded cheese on top and allow it to melt. You can also garnish with toppings like sour cream, jalapeños, or cilantro for extra flavor. - Enjoy!
Serve hot with tortilla chips or Doritos (Cool Ranch and Nacho Cheese flavors are a hit!). This dip is perfect for parties, game days, or as a crowd-pleasing appetizer.
Tips:
- For extra spice: Add diced jalapeños or a can of hot Rotel for more heat.
- Leftovers: Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop.
- Customizations: You can also add extras like black beans, corn, or diced onions if you want more texture and flavor.
This cheesy, savory dip is sure to be a hit! Perfect for snacking or as a party dish, and it reheats beautifully!
