Sweet and Sour Meatballs
Ingredients:
- 1 can (20 oz) pineapple chunks (with juice)
- 1 bag (32 oz) frozen meatballs
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 orange bell pepper, diced
- 1/3 cup brown sugar
- 1 cup ketchup
- 4 tablespoons Worcestershire sauce
Instructions:
- Prepare the Ingredients:
- Open the can of pineapple chunks and do not drain the juice. You’ll use both the chunks and the juice.
- Dice the green, red, and orange bell peppers into small, bite-sized pieces.
- Combine in the Crockpot:
- Place the frozen meatballs in the bottom of the crockpot.
- Add the pineapple chunks along with the juice.
- Add the diced bell peppers on top of the meatballs and pineapple.
- Sprinkle the brown sugar over the mixture.
- Pour the ketchup over the ingredients.
- Add the Worcestershire sauce.
- Mix the Ingredients:
- Using a large spoon, gently stir all the ingredients together in the crockpot to ensure everything is evenly coated with the sauce.
- Cook:
- Cover the crockpot with the lid.
- Set the crockpot to cook on low for 4-6 hours. If you are in a hurry, you can cook on high for 2-3 hours. Stir occasionally if possible, but it’s okay if you can’t.
- Prepare the Rice:
- About 30 minutes before the meatballs are done, start preparing your rice.
- Measure 2 cups of rice and 2 1/2 cups of water.
- Rinse the rice under cold water until the water runs clear.
- Add the rice and water to your Instant Pot.
- Seal the Instant Pot lid and set the valve to the « sealing » position.
- Cook on high pressure for 4 minutes, then let it naturally release for 10 minutes before releasing any remaining pressure manually.
- Serve:
- Fluff the cooked rice with a fork.
- Serve the sweet and sour meatballs over a bed of rice, making sure to spoon extra sauce from the crockpot over the meatballs and rice for added flavor.
Tips:
- For a spicier version, you can add a splash of hot sauce or a sprinkle of red pepper flakes to the crockpot mixture.
- This dish can be garnished with chopped green onions or sesame seeds for added texture and flavor.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
