Ingredients

  • 1-2 lbs ground beef (depending on how meaty you want it)
  • 1 packet taco seasoning (or homemade mix: 1 Tbsp chili powder, 1/2 tsp cumin, 1/2 tsp paprika, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp crushed red pepper, salt and pepper to taste)
  • 1 bag Nacho Cheese Doritos (about 10-12 oz, lightly crushed)
  • 1 bag potato rounds (about 1 lb, cooked as directed)
  • 1 1/2 to 2 cups shredded cheese (Mexican blend, cheddar, or your favorite)
  • 1 roll of crescent rolls (8-count)
  • 2 Tbsp melted butter for brushing

  • Sour cream
  • Salsa or pico de gallo
  • Chopped lettuce
  • Diced tomatoes
  • Sliced jalapeños
  • Green onions

Instructions

Step 1: Preheat and Prepare Potato Rounds
  1. Preheat your oven to 350°F (175°C).
  2. Arrange potato rounds on a baking sheet in a single layer and cook according to package directions until crispy. Once done, set them aside.
Step 2: Cook Ground Beef
  1. Brown the ground beef in a large skillet over medium heat until cooked through, breaking it up as it cooks.
  2. Drain excess grease from the skillet, then return beef to the pan.
  3. Add the taco seasoning to the beef along with 1/4 cup of water. Stir and simmer for 2-3 minutes, until seasoning is fully absorbed. Set aside.
Step 3: Assemble the Taco Bake
  1. Prepare a 9×13 baking dish by lightly greasing it or spraying with nonstick cooking spray.
  2. Layer the bottom with the cooked potato rounds, creating a single layer across the dish.
  3. Add the seasoned ground beef evenly over the potato rounds.
  4. Sprinkle shredded cheese over the ground beef layer, followed by a generous layer of crushed Nacho Cheese Doritos.
Step 4: Add Crescent Roll Topping
  1. Unroll the crescent dough and arrange the triangles over the top, covering as much as possible.
  2. Brush the crescents with the melted butter to help them bake up golden and flavorful.
Step 5: Bake
  1. Place the assembled dish in the preheated oven and bake for 12-15 minutes, or until the crescent rolls are golden brown and the cheese is melted.
Step 6: Serve
  1. Let the taco bake sit for a few minutes to set, then slice and serve.
