Taco Cornbread Casserole
Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 can Rotel (diced tomatoes with green chilies), undrained
- 1 can pinto beans, rinsed and drained
- 1 can corn, drained
- 2 boxes Jiffy cornbread mix
- Ingredients needed for the Jiffy mix (usually eggs and milk, as per box instructions)
Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare the Ground Beef:
- In a large skillet, cook the ground beef over medium-high heat until it is fully browned, breaking it apart with a spoon as it cooks.
- Once the beef is cooked, drain any excess fat from the skillet.
- Return the beef to the skillet and add the taco seasoning mix. Follow the instructions on the taco seasoning packet, usually adding about 2/3 cup of water. Stir to combine and let it simmer for a few minutes until the seasoning is well incorporated and the mixture has thickened.
- Prepare the Bean and Vegetable Mixture:
- Rinse and drain the pinto beans.
- Drain the corn.
- Add the rinsed beans, Rotel (undrained), and drained corn to the skillet with the seasoned beef. Stir to combine everything evenly.
- Prepare the Cornbread Mix:
- In a separate bowl, prepare the Jiffy cornbread mix according to the instructions on the box. This usually involves mixing the cornbread mix with eggs and milk. Make sure the batter is smooth and free of lumps.
- Combine and Assemble:
- Pour the beef, bean, and vegetable mixture into a 9×13-inch baking dish, spreading it out evenly.
- Pour the prepared Jiffy cornbread batter over the top of the beef mixture, spreading it out to cover the entire surface.
- Bake:
- Place the baking dish in the preheated oven and bake for about 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
- Serve:
- Once baked, remove the casserole from the oven and let it cool slightly before serving.
- Cut into squares and serve warm. This dish is great on its own, but you can also top it with your favorite taco toppings such as shredded cheese, sour cream, chopped cilantro, or sliced jalapeños.
