Taco Rice Recipe
Perfect for kids! Super cheap and filling meal that can feed quite a bit of people.
Ingredients:
- 1 pound ground beef
- 1 taco seasoning packet
- 2 cups water
- 2 cups Minute rice (instant rice)
- Crushed Doritos or tortilla chips
- Nacho cheese
- Optional toppings: lettuce, shredded cheese, sour cream, salsa, olives, jalapeños, tomatoes, etc.
Instructions:
- Brown the Ground Beef:
- In a large skillet or frying pan, cook 1 pound of ground beef over medium-high heat.
- Stir occasionally, breaking the meat into smaller pieces until it is fully browned and no longer pink.
- Once browned, carefully drain the excess fat from the pan.
- Add Seasoning and Rice:
- Return the skillet with the drained beef to the stove.
- Add the taco seasoning packet to the beef. Stir well to coat the meat evenly with the seasoning.
- Pour in 2 cups of water and add 2 cups of Minute rice.
- Stir the mixture to combine all the ingredients.
- Cook the Rice:
- Increase the heat to high and bring the mixture to a boil.
- Once boiling, reduce the heat to the lowest setting.
- Cover the skillet with a lid and let it sit covered for 5 minutes. This allows the rice to absorb the water and flavors.
- Prepare to Serve:
- After 5 minutes, remove the lid and give the mixture a good stir.
- In individual serving bowls, place a layer of crushed Doritos or tortilla chips.
- Serve:
- Spoon the taco rice mixture over the crushed chips.
- Top with warm nacho cheese.
- Serve as is, or add your favorite taco toppings such as lettuce, shredded cheese, sour cream, salsa, olives, jalapeños, and tomatoes.
- Alternative Serving Option:
- Instead of placing the taco rice on top of the chips, you can serve it in a bowl with the chips on the side, allowing it to be enjoyed as a dip.
