Taco-Stuffed Avocados
Ingredients:
- 4 ripe avocados
- Ensure they are ripe but firm to hold the fillings.
- Juice of 1 lime
- Freshly squeezed to prevent browning.
- 1 tablespoon extra-virgin olive oil
- For sautéing the onions and beef.
- 1 medium onion, chopped
- Finely chop for even cooking.
- 1 pound ground beef
- Lean ground beef is preferable.
- 1 packet taco seasoning
- Store-bought or homemade (usually contains chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper).
- Kosher salt and freshly ground black pepper
- To taste.
- 2/3 cup shredded Mexican cheese blend
- A mix of cheddar, Monterey Jack, and queso blanco.
- 1/2 cup shredded lettuce
- Iceberg or Romaine for crunch.
- 1/2 cup quartered grape tomatoes
- Rinse and quarter for topping.
- Sour cream
- For topping, as desired.
Instructions:
- Prepare the Avocados:
- Halve and pit the avocados. Use a spoon to scoop out a small portion of the flesh, creating a larger well in each half. Set the removed avocado aside, dice it, and reserve it for later use.
- Squeeze lime juice over the avocado halves and the diced avocado to prevent browning.
- Cook the Beef:
- Heat the olive oil in a medium skillet over medium heat.
- Add the chopped onion to the skillet. Cook, stirring occasionally, until the onions are tender and translucent, about 5 minutes.
- Add the ground beef to the skillet. Break it up with a wooden spoon as it cooks. Stir in the taco seasoning, salt, and pepper.
- Continue cooking until the beef is browned and no longer pink, about 6 minutes. Remove the skillet from heat and drain any excess fat.
- Assemble the Stuffed Avocados:
- Fill each avocado half with the cooked beef mixture.
- Top with the reserved diced avocado, then sprinkle with shredded cheese.
- Add shredded lettuce and quartered grape tomatoes on top.
- Finish each avocado half with a dollop of sour cream.
- Serve Immediately:
- Serve the taco-stuffed avocados immediately to enjoy the freshest flavors.
