Tamale Casserole
2 small boxes Jiffy Cornbread mix
*2 eggs
*2/3 C milk
2 lbs ground beef
2 cans red enchilada sauce
2 C taco/Mexican blend shredded cheese
Ground Cumin
Chili Powder
Garlic powder
Onion powder
Salt
Spray 9X13 pan
Preheat oven to 350°
In a medium bowl combine cornbread mix, milk and eggs and pour batter into prepared pan, bake at 350° for 20-25 minutes, just until middle is set and top is light golden brown. Poke holes in the cornbread with a spoon handle and pour 1 can of enchilada sauce over the top. In a large skillet brown the ground beef, seasoned with salt, onion powder and garlic powder. Drain all grease then return beef to skillet, stir in 1 can enchilada sauce, 2 tsp chili powder, 2 tsp ground cumin, season with onion and garlic powder to your taste, add 3/4 C water and simmer for 10 minutes. Pour meat mixture over cornbread and spread evenly then top with shredded cheese and bake at 350° for 6-8 minutes. You may top with sour cream, diced onion, salsa, whatever you like. Enjoy!
