Texas Chopped Southwest Salad Recipe

Ingredients:

For the Dressing:

  • 1 cup ranch dressing
  • 1 packet taco seasoning

For the Salad:

  • 1 head of romaine lettuce, chopped
  • 1 can of black beans, drained and rinsed
  • 1 can of fresh corn, drained
  • 1/4 cup fresh cilantro, chopped
  • 1 cup Roma tomatoes, diced
  • 1 cucumber, peeled and diced
  • 1 cup shredded cheese (cheddar or your choice)
  • Juice of 1 fresh lime
  • 1 lb grilled chicken breast, diced
  • Tortilla chips, crushed (for topping)
  • 1 avocado, sliced

Instructions:

  1. Prepare the Dressing:
  • In a medium bowl, combine the ranch dressing and taco seasoning. Stir well until the seasoning is fully incorporated into the dressing. Set aside.
  1. Assemble the Salad:
  • In a large salad bowl, combine the chopped romaine lettuce, black beans, fresh corn, chopped cilantro, diced Roma tomatoes, and diced cucumber.
  • Add the shredded cheese and toss to mix the ingredients evenly.
  1. Add Chicken and Dressing:
  • Dice the grilled chicken breast and add it to the salad mixture.
  • Pour the prepared dressing over the salad and toss gently to coat all the ingredients evenly.
  1. Finish and Serve:
  • Squeeze the juice of a fresh lime over the salad for added flavor.
  • Top with crushed tortilla chips and sliced avocado.
