Ingredients:
For the Dressing:
- 1 cup ranch dressing
- 1 packet taco seasoning
For the Salad:
- 1 head of romaine lettuce, chopped
- 1 can of black beans, drained and rinsed
- 1 can of fresh corn, drained
- 1/4 cup fresh cilantro, chopped
- 1 cup Roma tomatoes, diced
- 1 cucumber, peeled and diced
- 1 cup shredded cheese (cheddar or your choice)
- Juice of 1 fresh lime
- 1 lb grilled chicken breast, diced
- Tortilla chips, crushed (for topping)
- 1 avocado, sliced
Instructions:
- Prepare the Dressing:
- In a medium bowl, combine the ranch dressing and taco seasoning. Stir well until the seasoning is fully incorporated into the dressing. Set aside.
- Assemble the Salad:
- In a large salad bowl, combine the chopped romaine lettuce, black beans, fresh corn, chopped cilantro, diced Roma tomatoes, and diced cucumber.
- Add the shredded cheese and toss to mix the ingredients evenly.
- Add Chicken and Dressing:
- Dice the grilled chicken breast and add it to the salad mixture.
- Pour the prepared dressing over the salad and toss gently to coat all the ingredients evenly.
- Finish and Serve:
- Squeeze the juice of a fresh lime over the salad for added flavor.
- Top with crushed tortilla chips and sliced avocado.
