$5 Ground Beef and Vegetable Noodle Soup
Ingredients:
- 1 cup leftover ground beef (or about ½ lb if starting fresh)
- 8 oz egg noodles (half a bag)
- 2 cans vegetable soup (any brand, or store-brand to save more)
- 1 cup beef broth (or water with a bouillon cube)
- Seasonings:
- ½ tsp thyme
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Optional add-ins:
- Any leftover vegetables (carrots, peas, corn, green beans, etc.)
- Leftover meat from other meals (chicken, sausage, etc.)
Instructions:
- Cook the Noodles:
- Boil the egg noodles in salted water according to the package instructions until al dente. Drain and set aside.
- Prepare the Ground Beef:
- If using leftover ground beef, warm it in a large pot over medium heat.
- If cooking from fresh, brown the ground beef in a pot over medium heat. Season with a pinch of salt, pepper, and your preferred seasonings (Italian seasoning, thyme, etc.).
- Add the Soups and Broth:
- Pour the 2 cans of vegetable soup into the pot with the ground beef.
- Add in beef broth (or water with a bouillon cube), and stir to combine.
- Season and Simmer:
- Add thyme, Italian seasoning, and any other spices to your taste.
- If you have any leftover vegetables or other meats from previous meals, now’s the time to toss them in!
- Let the soup simmer for about 10-15 minutes, allowing the flavors to meld together.
- Combine and Serve:
- Add the cooked egg noodles to the pot and stir until everything is well combined.
- Let it simmer for another 2-3 minutes to warm the noodles through.
- Serve:
