Mississippi Pot Roast
Ingredients
- 1 chuck roast (about 3 to 4 pounds)
- 1 stick (1/2 cup) of unsalted butter
- 1 packet of Au Jus gravy mix (about 1 oz)
- 1 packet of dry Ranch seasoning mix (about 1 oz)
- About 7 pepperoncinis, plus half the jar of juice (you can adjust to taste)
- Optional: Salt and pepper to taste, depending on your roast size
Instructions
- Prepare the Chuck Roast:
If needed, trim excess fat from the chuck roast, but leave some on for flavor. Season the roast lightly with salt and pepper if desired, though the seasoning mixes provide a lot of flavor. - Set Up the Crockpot:
Place the chuck roast into the bottom of the crockpot. - Add Seasonings and Butter:
Sprinkle the Au Jus gravy mix and dry Ranch seasoning evenly over the top of the roast. - Add Pepperoncinis:
Place about 7 pepperoncinis on and around the roast. Pour half the jar of pepperoncini juice into the crockpot, which adds a tangy kick to balance the rich flavors. - Add Butter:
Place the stick of unsalted butter on top of the roast. It will melt down and create a rich, savory gravy as it cooks. - Cook the Roast:
Cover the crockpot with the lid and cook on high for about 6 hours. Alternatively, you can cook it on low for 8-10 hours if you prefer a slower, more tender roast. The roast is ready when it’s tender enough to shred easily with a fork. - Make the Gravy:
Once the roast is done, remove it from the crockpot and shred it using two forks. The juices in the crockpot will have formed a beautiful, flavorful gravy. Stir the gravy well and taste to adjust the seasoning if needed. - Serve:
Serve the shredded roast with the gravy over mashed potatoes, or enjoy it with your favorite side dishes like roasted vegetables, rice, or crusty bread.
Tips:
- Optional Add-Ins: For extra flavor, you can add sliced onions or garlic cloves to the crockpot along with the roast.
- Leftovers: This roast makes excellent leftovers for sandwiches or can be used in tacos, sliders, or even over rice.
- Pepperoncini Adjustments: If you prefer a milder flavor, reduce the amount of pepperoncinis and juice. For more heat, feel free to add extra pepperoncinis.
