Easy Breakfast Sandwich Recipe

Ingredients:
- 2-3 eggs (depending on how hearty you want it)
- 2 slices of bread (your choice: white, wheat, sourdough, etc.)
- Butter (to butter the bread)
- Cheese (any type: cheddar, American, Swiss, etc.)
- Meat or other toppings (optional: bacon, sausage, ham, avocado, spinach, etc.)
- Salt & pepper to taste
Instructions:
- Prepare Your Bread:
- Butter one side of each slice of bread. The buttered side will help the bread get golden and crispy when grilled.
- Cook the Eggs:
- Whisk 2-3 eggs in a small bowl and season with a pinch of salt and pepper.
- Heat a nonstick skillet over medium heat and pour the whisked eggs into the pan.
- Let the eggs cook for 1-2 minutes, allowing them to set just enough to stay together, but not fully cooked yet.
- Add the Bread to the Eggs:
- Place the non-buttered side of each bread slice onto the egg mixture while it’s still slightly wet.
- Let it cook for another 1-2 minutes, until the egg is mostly set but still slightly soft.
- Flip the Egg & Bread:
- Using a spatula, flip the entire egg and bread combo (so that the buttered sides of the bread are now touching the pan).
- At this point, the eggs should be under the bread and the buttered bread is getting toasted.
- Add Toppings:
- While the bread is toasting and the eggs finish cooking, add your toppings like cheese, bacon, sausage, or veggies to one of the slices of bread.
- Fold the sides of the eggs that are sticking out over the bread, creating a neat square.
- Assemble the Sandwich:
- Take the slice of bread without toppings and flip it over onto the other slice (cheese side), creating a sandwich.
- Press down lightly with the spatula to help everything stick together as the cheese melts.
- Cook Until Golden:
- Continue to grill the sandwich for another minute or two, until the bread is golden brown and crispy, and the cheese is melted.
Serving Suggestions:
- Serve the sandwich as is, or pair it with some hash browns, fruit, or even a side of salsa for dipping.
