Ingredients

For the Shortbread Base:
  • 1 cup (2 sticks) unsalted butter, softened
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract

For the Caramel Layer:
  • 1 (14 oz) can sweetened condensed milk
  • ½ cup unsalted butter
  • ½ cup packed brown sugar
  • 2 tablespoons light corn syrup

  • 2 cups milk or semisweet chocolate chips
  • 1 tablespoon vegetable oil (optional, for a shinier finish)

Instructions

  1. Prepare the Shortbread Base:
    • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
    • In a large mixing bowl, cream together the softened butter, sugar, and vanilla extract until light and fluffy.
    • Gradually add the flour and salt, mixing until a soft dough forms.
    • Press the dough evenly into the prepared pan to form an even layer.
    • Bake for 18-20 minutes or until the edges are lightly golden. Allow to cool completely in the pan.
  2. Make the Caramel Layer:
    • In a medium saucepan over medium heat, combine the sweetened condensed milk, butter, brown sugar, and corn syrup.
    • Stir constantly to prevent burning. Bring the mixture to a gentle boil and cook until thickened and golden brown, about 5-7 minutes.
    • Remove from heat and stir in the vanilla extract.
    • Pour the caramel over the cooled shortbread base, spreading it into an even layer. Let it set for 30-45 minutes, or until firm.
  3. Add the Chocolate Topping:
    • Melt the chocolate chips in a microwave-safe bowl in 30-second increments, stirring after each, until smooth. Stir in vegetable oil for a glossy finish, if desired.
    • Pour the melted chocolate over the caramel layer, spreading it evenly with a spatula.
    • Allow the chocolate to set completely at room temperature or in the refrigerator.
  4. Cut and Serve:
    • Once the chocolate is firm, use the parchment overhang to lift the cookies out of the pan.
    • Cut into squares, rectangles, or Twix-style bars using a sharp knife. For clean cuts, wipe the knife with a warm, damp cloth between slices.
