UPDATE!! All, I am just overwhelmed at the response and had tears in my eyes reading all the comments. I thought maybe a FEW people MIGHT find it interesting that I had homemade cookie sheets from my Dad. I am just blown away. To answer a couple repeating questions I use an old school hand Mirror press for my spritz cookies. I tried a couple more modern presses and did not have as good of success. I like the control of how much or little dough I can turn out depending on how my dough “is” on any particular year. I always use room temp butter. Super clean cookie sheets(wash and hand dry in between every batch in oven) also always cold sheets. I run them under cold water and dry them if they feel warm to me. I also make and bake them first thing in the morning so the house isn’t over warm. I handle the dough as little as possible so the butter doesn’t get too warm. I do not ever chill the dough. Also, I think I just have a knack for spritz cause I am pretty sure by about 6th grade I was in charge of the spritz press (Mom had already determined I was better at it than her lol). This post isn’t really about the cookies or the recipes though they are the recipes I made with my Mom as a kid. This post is about my cookie sheets which I hope you all will appreciate. My Dad made my cookie sheets. He was a sheet metal worker who had made my mom’s cookie sheets over the years and if she needed a certain size pan he just made it for her. When I moved out 40 years ago I tried to buy cookie sheets but none worked like my Moms’ so he made me my own set and I have used nothing else since. Nothing ever burns or sticks, no parchment needed unless you want to use it. They are stainless steel. Both my parents are long gone but memories live on. Merry Christmas 🎄❤️😋
