Upside Down Shepherd’s Pie

Ingredients:

  • 2 lbs ground beef
  • 2 packets of brown gravy mix (or equivalent in jarred gravy)
  • 2 cups leftover corn
  • 4 cups leftover mashed potatoes
  • 1 cup shredded cheese (cheddar or your favorite blend)

Instructions:

  1. Prepare the Ground Beef:
    • In a large skillet over medium-high heat, cook the ground beef until fully browned, breaking it up into crumbles as it cooks.
    • Once browned, drain the excess grease from the skillet.
  2. Make the Gravy:
    • While the ground beef is cooking, prepare the brown gravy according to the package instructions (or heat up jarred gravy if using).
    • After draining the grease from the cooked ground beef, return it to the skillet.
    • Pour the prepared gravy over the ground beef, stirring to combine. Let it simmer on low heat for about 5 minutes to let the flavors meld.
  3. Reheat the Leftovers:
    • In a microwave-safe dish, warm up the leftover mashed potatoes and corn. Heat in the microwave for about 2-3 minutes, or until thoroughly heated. You can also warm them up on the stovetop if you prefer.
  4. Assemble the Upside Down Shepherd’s Pie:
    • On each serving plate, start with a layer of the mashed potatoes, spreading them out evenly.
    • Next, add a layer of the warmed corn over the mashed potatoes.
    • Spoon the ground beef and gravy mixture over the corn.
    • Sprinkle shredded cheese on top of the hot ground beef mixture so it melts slightly.
  5. Serve and Enjoy:
    • Serve the upside down shepherd’s pie immediately while everything is warm and the cheese is melted.
    • Enjoy this hearty and comforting meal!
