2 packets of brown gravy mix (or equivalent in jarred gravy)
2 cups leftover corn
4 cups leftover mashed potatoes

Instructions:
Prepare the Ground Beef:
In a large skillet over medium-high heat, cook the ground beef until fully browned, breaking it up into crumbles as it cooks.
Once browned, drain the excess grease from the skillet.
Make the Gravy:
While the ground beef is cooking, prepare the brown gravy according to the package instructions (or heat up jarred gravy if using).
After draining the grease from the cooked ground beef, return it to the skillet.
Pour the prepared gravy over the ground beef, stirring to combine. Let it simmer on low heat for about 5 minutes to let the flavors meld.
Reheat the Leftovers:
In a microwave-safe dish, warm up the leftover mashed potatoes and corn. Heat in the microwave for about 2-3 minutes, or until thoroughly heated. You can also warm them up on the stovetop if you prefer.
Assemble the Upside Down Shepherd’s Pie:
On each serving plate, start with a layer of the mashed potatoes, spreading them out evenly.
Next, add a layer of the warmed corn over the mashed potatoes.
Spoon the ground beef and gravy mixture over the corn.
Sprinkle shredded cheese on top of the hot ground beef mixture so it melts slightly.
