Veggie Bars Recipe

These Veggie Bars are a fun, savory snack that combines a crisp crescent dough crust with a creamy ranch spread, topped with finely chopped fresh veggies and cheese. They’re perfect for parties, snacks, or even a light appetizer!

Ingredients

  • 1 package cream cheese, softened
  • 1 packet ranch dressing mix
  • Shredded cheddar cheese (finely shredded)
  • 1 sheet of crescent roll dough
  • 1 small peeled carrot (or a few baby carrots)
  • A few raw broccoli florets
  • A few raw cauliflower florets

Instructions

  1. Preheat Oven:
Preheat your oven to the temperature specified on the crescent roll dough package (usually 375°F or 190°C).
  2. Prepare Crescent Dough:
Unroll the crescent dough onto a cookie sheet. Stretch it out to cover the entire sheet. Bake according to the package instructions, usually 10-12 minutes, until golden and cooked through. Once baked, let the dough cool completely.
  3. Prepare the Veggies:
  • Peel and finely chop the carrot (or use a few baby carrots).
  • Chop the broccoli and cauliflower into small florets.
  • Place all the veggies into a food processor and chop them until finely minced (you want about 1 cup total).
  • Remove any excess water from the veggies by placing them on paper towels and pressing down lightly.
  1. Make the Cream Cheese Mixture:
In a bowl, combine the softened cream cheese with the ranch dressing mix. Mix until smooth and well combined.
  2. Assemble the Veggie Bars:
  • Once the crescent dough has cooled, transfer it from the baking sheet to a cutting board or parchment paper to prevent sticking.
  • Spread the cream cheese mixture evenly across the cooled dough, covering it entirely.
  • Sprinkle a light layer of shredded cheddar cheese over the cream cheese.
  • Spread the finely chopped veggies evenly on top of the cheese.
  • Add a little more shredded cheddar cheese on top of the veggies.
  1. Press and Chill:
Gently press everything down to help the ingredients bind together. This will ensure the veggies and cheese stick to the cream cheese layer.
  • Place the entire dish in the fridge for about 10–15 minutes to make it easier to cut into bars.
  1. Cut and Serve:
Once chilled, cut into 20 squares or bars. Serve chilled and enjoy!

Tips

  • Veggie Variations: Feel free to swap or add more veggies like cucumbers, bell peppers, or green onions for variety.
  • Make Ahead: These can be made a day ahead and stored in the fridge for easy prep before your party or gathering.
  • Cheese Options: Use a blend of cheddar and parmesan for extra flavor!

These Veggie Bars are easy to make, light, and delicious—perfect for anyone who loves fresh veggies with a creamy, savory twist. Enjoy!
