Blueberry Cobbler Recipe
Ingredients
- 3 cups blueberries (fresh or frozen)
- 3 cups sugar, divided
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 2 sticks margarine (melted; about 1 cup)
- 1 tsp vanilla extract
- 2 tsp lemon juice
- 1 cup milk (whole milk preferred)
- 1 cup warm water
Directions
- Preheat Oven:
Set your oven to 350°F (175°C). Grease a 13 x 9-inch baking dish with butter or non-stick spray. - Prepare the Blueberries:
Spread the 3 cups of blueberries evenly across the bottom of your prepared baking dish. Sprinkle the 2 tsp of lemon juice over the berries to enhance the flavor and add a bit of tangy brightness. - Mix the Batter:
In a large bowl, combine 1 cup of sugar, 2 cups of flour, 2 tsp of baking powder, and ½ tsp of salt. Add the melted margarine, 1 tsp vanilla extract, and 1 cup of milk, and stir everything together until the mixture is smooth and well combined.
- Tip: Make sure the batter is not too thick or too runny; it should resemble pancake batter in consistency.
- Assemble the Cobbler:
Pour the batter evenly over the blueberries, spreading it out gently with a spatula if needed to cover the berries. The batter doesn’t have to fully cover the blueberries—leave some gaps so the fruit can bubble through while baking. - Prepare the Sugar Water:
In a separate bowl, combine the remaining 2 cups of sugar with 1 cup of warm water. Stir well until the sugar is mostly dissolved. This creates a sweet syrup that will help caramelize the top of the cobbler as it bakes. - Add the Sugar Water:
Carefully pour the sugar water evenly over the batter in the pan. It may seem like a lot of liquid, but it will soak in and form a delicious crust while baking. - Bake the Cobbler:
Place the cobbler in the preheated oven and bake for 1 hour or until the top is golden brown and the filling is bubbly. You may want to check it around the 50-minute mark to make sure it’s not over-browning. If needed, you can cover it loosely with foil to prevent too much browning on top. - Serve:
Once done, remove the cobbler from the oven and let it cool slightly before serving. It’s absolutely delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Tips:
- Frozen Blueberries: If using frozen blueberries, you can add them directly to the pan without thawing. Just note that the cobbler may need a few extra minutes in the oven.
- Optional Add-Ins: For a fun twist, try adding a pinch of cinnamon or nutmeg to the batter for a bit of extra warmth.
- Storage: Store any leftovers covered in the refrigerator for up to 3 days. You can reheat portions in the microwave or oven.
