Crispy Fried Okra with Panko Crumbs
Ingredients:
- 1 egg
- 2 tablespoons water
- Fresh okra, sliced (enough to fill a gallon-sized ziplock bag)
- 1/3 cup all-purpose flour
- 1/3 cup cornmeal (preferably fine ground)
- 1/3 cup panko breadcrumbs (for extra crunch)
- 1/2 teaspoon Tiger salt (or your favorite seasoned salt)
- 1/2 teaspoon onion powder
- 1/2 teaspoon seasoning salt
- 1/4 teaspoon black pepper
- Cooking oil (enough to cover the bottom of the skillet)
Directions:
- Prep the Okra:
In a gallon-sized ziplock bag, mix 1 egg with 2 tablespoons of water. Add your sliced okra to the bag, seal it, and gently shake to coat the okra evenly with the egg mixture. Let it sit in the bag while you heat the skillet and prepare the dredge. - Heat the Skillet:
Heat about 1/4 inch of oil in a large non-stick or cast-iron skillet over medium-high heat. The oil should be hot but not smoking. - Prepare the Dredge:
On a plate or shallow dish, combine 1/3 cup flour, 1/3 cup cornmeal, and 1/3 cup panko breadcrumbs. Stir the mixture well so that the okra will be evenly coated. - Dredge the Okra:
Remove a few pieces of the egg-coated okra from the bag and dredge them in the flour-cornmeal-panko mixture. Make sure each piece is thoroughly coated, then shake off any excess. - Fry the Okra:
Place the coated okra directly into the hot oil. Work in batches if necessary, making sure the pan isn’t overcrowded. Once the okra is in the skillet, season with Tiger salt, onion powder, seasoning salt, and black pepper. Cook for 4-5 minutes on one side, then flip and season again. Continue frying until the okra is crispy and golden brown on both sides, about 4-5 minutes per side. - Drain and Serve:
Once the okra is fried to perfection, remove it from the skillet and place it on a paper towel-lined plate to drain any excess oil.
