Pepperoni Pizza Lasagna Roll-Ups
Ingredients:
- 8-10 lasagna noodles (uncooked)
- 1 cup Ricotta cheese
- 1 package pepperoni slices
- 1 ½ – 2 cups pasta or pizza sauce (divided)
- 1 ½ cups shredded mozzarella cheese
- 1 tablespoon olive oil (for greasing the dish)
- Optional: Italian seasoning, garlic powder, or crushed red pepper flakes for added flavor
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C).
- Cook the Lasagna Noodles:
- Bring a large pot of salted water to a boil and cook the lasagna noodles until they’re just al dente (usually 7-8 minutes). Be careful not to overcook; they should be soft but still hold their shape.
- Drain and immediately lay the noodles flat on a baking sheet or wax paper to prevent them from sticking and breaking.
- Prepare the Baking Dish:
- Lightly grease a 9×13-inch glass baking dish with olive oil.
- Spread a thin layer (about ½ cup) of pasta or pizza sauce across the bottom of the dish to prevent sticking and add flavor to the roll-ups.
- Assemble the Roll-Ups:
- Working with one noodle at a time, lay a noodle flat on a clean surface.
- Spread about 1-2 tablespoons of Ricotta cheese evenly over the noodle.
- Lay 4-5 pepperoni slices on top of the Ricotta, spacing them out evenly.
- Gently roll up the noodle from one end to the other to create a compact roll. Place it seam-side down in the prepared baking dish.
- Repeat this process with the remaining noodles.
- Top with Sauce and Cheese:
- Once all the roll-ups are in the dish, pour the remaining pasta or pizza sauce evenly over the top, making sure each roll-up is covered.
- Sprinkle the shredded mozzarella generously over the roll-ups.
- Bake:
- Cover the dish with foil and bake in the preheated oven for 20 minutes, until the cheese is melted and bubbly. If you’d like a golden top, remove the foil during the last 5 minutes of baking.
- Serve:
- Let the roll-ups cool for a few minutes, then serve with a sprinkle of Italian seasoning, garlic powder, or crushed red pepper flakes for added flavor.
Tips and Variations:
- Extra Fillings: For even more of a “supreme pizza” feel, try adding sliced black olives, green bell pepper, or sautéed mushrooms on top of the pepperoni.
- Marinara Lovers: If you prefer more sauce, add extra on top before baking or serve with extra sauce on the side for dipping.
- Make It Spicy: Add a little crushed red pepper to the Ricotta layer for a slight kick, or top with spicy pepperoni.
