Classic Meatloaf with Sauce
Ingredients:
- 2 lbs ground beef (or a mix of beef and pork for extra flavor)
- 1 cup breadcrumbs (plain or Italian-style)
- 1/2 cup milk
- 2 large eggs
- 1 small onion, finely diced
- 1/4 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chopped parsley (optional)
For the Sauce:
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tsp mustard
- 1 tsp Worcestershire sauce
Instructions:
- Prepare the Meatloaf Mixture:
- In a large mixing bowl, combine the breadcrumbs and milk. Let sit for 1-2 minutes to soften.
- Add the ground beef, eggs, diced onion, ketchup, Worcestershire sauce, garlic powder, salt, black pepper, and parsley. Mix gently with your hands or a spoon until just combined. Overmixing can make the meatloaf tough.
- Shape the Meatloaf:
- Transfer the mixture to a greased loaf pan or shape it into a loaf on a parchment-lined baking sheet. Cover tightly with foil if traveling.
- Prepare the Sauce:
- In a small bowl, mix the ketchup, brown sugar, mustard, and Worcestershire sauce until smooth.
- Travel and Cooking:
- Once you arrive, preheat the oven to 350°F.
- Spoon half of the sauce over the meatloaf and bake uncovered for 40-45 minutes.
- Remove from the oven, drain any grease, and spread the remaining sauce on top.
- Return to the oven and bake for another 15-20 minutes, or until the internal temperature reaches 160°F.
- Rest and Serve:
- Let the meatloaf rest for 5-10 minutes before slicing to allow the juices to redistribute.
Pairing this with buttered potatoes and squash is a warm, comforting combination perfect for a birthday celebration. Wishing your daughter a very happy 35th! 🎉 Safe travels!
