Cheesy Rotel Pasta

This creamy, cheesy pasta dish with Rotel tomatoes and ground chuck is packed with flavor and comes together easily. Perfect for a hearty weeknight meal that’ll satisfy the whole family!


Ingredients:

  • 1 lb ground chuck
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 12 oz pasta noodles (penne, rotini, or your choice)
  • 1 can Rotel tomatoes (10 oz), undrained
  • 1 cup Velveeta cheese, cubed
  • 1 cup Blanco Velveeta cheese, cubed
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1/2 cup heavy whipping cream

Seasonings:

  • 1 tsp season salt
  • 1 tsp lemon pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 packet taco seasoning
  • 1/2 tsp Slap Ya Mama seasoning
  • 1/4 tsp Accent seasoning (optional)

Instructions:

  1. Cook the Pasta:
  • In a large pot, cook the pasta according to package directions until al dente. Drain and set aside.
  1. Cook the Meat and Vegetables:
  • In a large skillet or deep pan, cook the ground chuck over medium heat until browned. Drain excess grease.
  • Add the diced onions and bell peppers to the pan. Sauté until softened, about 5 minutes.
  1. Season the Meat:
  • Sprinkle the season salt, lemon pepper, garlic powder, onion powder, taco seasoning, Slap Ya Mama, and Accent seasoning over the meat mixture. Stir well to coat.
  1. Add Rotel and Cheese:
  • Pour in the Rotel tomatoes (including juices) and stir.
  • Add both the Velveeta and Blanco Velveeta cubes. Stir continuously until the cheese is melted and well combined with the meat mixture.
  1. Make It Creamy:
  • Reduce the heat to low and pour in the heavy whipping cream, stirring to create a smooth, creamy sauce.
  1. Combine Pasta and Sauce:
  • Add the cooked pasta to the cheese mixture, stirring until all noodles are well-coated with the cheesy sauce.
  1. Add Shredded Cheese:
  • Sprinkle the shredded cheese over the top, allowing it to melt into the pasta. Cover the skillet for a couple of minutes to help the cheese melt fully, if needed.
  1. Serve:
