Cowboy Supper Recipe

This hearty meal is budget-friendly, kid-approved, and versatile. You can serve it on its own, with tortilla chips, in burritos, tacos, or however you like. This recipe is perfect for a family of six and will provide enough food for two nights of dinner.

Ingredients:

  • 1.5 lbs ground beef: You can use more or less depending on your preference for meat ($4.00 for 1 lb, adjust if using more).
  • 1 package taco seasoning: Adds a kick of flavor to the beef ($0.50).
  • 8 medium red potatoes, diced: These will bulk up the dish and provide substance ($4.00).
  • 1 can Rotel (10 oz): Do not drain. Choose the spicy version if you want more heat ($1.00).
  • 1 can corn (15 oz), drained: Adds sweetness and texture to the dish ($0.60).
  • 1 can mixed chili beans (15 oz): You can use a hot chili sauce if you prefer more spice ($1.00).
  • 1 bottle BBQ sauce (18 oz): Choose your favorite brand, Sweet Baby Ray’s works great for a sweet and tangy flavor ($2.20).
  • Tortilla chips or tortilla shells: For serving, as a dip or wrap ($2.00).

Instructions:

  1. Prepare the Potatoes:
  • Wash and dice the red potatoes into small, bite-sized pieces. If you plan to use this as a filling for burritos or as a dip, make the pieces smaller for easier wrapping or scooping.
  • In a large pot, bring water to a boil. Add the diced potatoes and cook for about 10-15 minutes, or until they are fork-tender. Drain and set aside.

  • While the potatoes are boiling, heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up into small crumbles as it cooks.
  • Once the beef is fully cooked, drain any excess fat.
  • Add the taco seasoning to the beef along with the amount of water called for on the taco seasoning package (usually around 1/4 to 1/2 cup). Stir to combine and let it simmer for a few minutes until the seasoning is fully incorporated.
  1. Combine the Ingredients:
  • In a large pot or slow cooker, combine the cooked and seasoned ground beef, boiled potatoes, undrained can of Rotel, drained can of corn, and the can of mixed chili beans.
  • Stir everything together until well mixed.
  1. Add the BBQ Sauce:
  • Pour the BBQ sauce over the mixture and stir to combine. You can adjust the amount of BBQ sauce to taste, depending on how sweet and tangy you like your dish.
  • If you prefer a thicker consistency, you can let the mixture simmer on low heat for 10-15 minutes to reduce some of the liquid.

  • You can serve this Cowboy Supper as is, straight out of the pot, or get creative with it! Here are some serving ideas:
