Perfect for meal prepping, these McGriddle muffins are a delicious and convenient breakfast on the go!
Ingredients:
- 1 pound breakfast sausage
- 2 cups pancake mix of your choice (e.g., Bisquick, Aunt Jemima, etc.)
- 1 1/2 cups water
- 1/4 cup maple syrup
- 1 cup shredded cheese (cheddar or your favorite variety)
Instructions:
- Preheat your oven:
- Set your oven to 400°F (200°C) to preheat while you prepare the ingredients.
- Cook the sausage:
- In a large skillet over medium heat, cook the 1 pound of breakfast sausage until it’s browned and fully cooked through. Break it up into small pieces as it cooks.
- Once cooked, drain any excess grease on a paper towel-lined plate. Let it cool slightly.
- Prepare the pancake batter:
- In a large mixing bowl, combine 2 cups of pancake mix with 1 1/2 cups of water. Stir until the mixture is smooth and free of lumps.
- Add 1/4 cup of maple syrup to the batter and mix well.
- Fold in 1 cup of shredded cheese, ensuring it’s evenly distributed throughout the batter.
- Combine sausage with batter:
- Once the sausage has cooled a bit, add it to the pancake batter. Mix until the sausage pieces are evenly incorporated into the batter.
- Fill the muffin tins:
- Lightly grease your muffin tin or line it with paper muffin liners.
- Pour the batter into the muffin cups, filling each one about 2/3 full. Use a spoon or a small ladle to ensure even distribution.
- Bake the muffins:
- Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Start checking for doneness at the 12-minute mark to prevent overbaking.
- Cool and store:
- Once baked, remove the muffin tin from the oven and allow the muffins to cool in the tin for about 5 minutes.
- Transfer the muffins to a wire rack to cool completely.
- Store the muffins in an airtight container in the refrigerator for up to 5 days, or freeze them for longer storage.
Serving Suggestions:
- Enjoy these muffins warm or at room temperature.
