Ingredients

- 1 cup plain Greek yogurt (substitutes: sour cream, regular yogurt, or cottage cheese)
- 2 tablespoons vegetable oil
- 1/4 cup all-purpose flour
Equipment
- Blender or whisk
- Mixing bowl (if using a whisk)
- Griddle or large skillet
- Spatula
Instructions
- Prepare the Batter:
- If using a blender: Add the eggs, Greek yogurt, vegetable oil, and flour to the blender. Blend until the mixture is smooth and well combined.
- If using a whisk: In a mixing bowl, whisk together the eggs, Greek yogurt, and vegetable oil until smooth. Gradually add the flour and continue whisking until the batter is smooth and free of lumps.
- Heat the Griddle or Skillet:
- Preheat your griddle or large skillet over medium heat. Lightly grease the surface with a small amount of vegetable oil or non-stick cooking spray.
- Cook the Roll Ups:
- Pour about 1/4 cup of batter onto the hot griddle or skillet for each roll up. Use the back of a spoon to spread the batter into a thin circle, similar to making a crepe.
- Cook for about 1-2 minutes, or until the edges start to lift and the bottom is golden brown. Flip the roll up with a spatula and cook the other side for another 1-2 minutes, until it is also golden brown.
- Remove from the griddle and place on a plate. Repeat with the remaining batter.
- Serve and Fill:
- Allow your kids (or yourself) to choose their favorite fillings. Some popular combinations include:
- Strawberries + Cream Cheese + Powdered Sugar: Spread a thin layer of cream cheese over the roll up, sprinkle with powdered sugar, and top with sliced strawberries.
- Bananas + Peanut Butter + Honey: Spread peanut butter over the roll up, add banana slices, and drizzle with honey.
