Sour Cream Sugar Cookies

These soft and tender sugar cookies are perfect for Christmas cutouts or as drop cookies with mix-ins like chocolate, peanut butter chips, or nuts. The sour cream adds a moist and rich texture, while the Mexican pure vanilla enhances the flavor with a warm, aromatic touch.


Ingredients:

  • 1 cup margarine (or unsalted butter, softened)
  • 2 cups granulated sugar
  • 2 large eggs (preferably jumbo size)
  • 3 tablespoons Mexican pure vanilla extract
  • 1 cup sour cream
  • 5 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder

Instructions:

1. Prepare the Dough:

  1. In a large mixing bowl, cream the margarine until smooth and fluffy.
  2. Gradually add the sugar and beat until light and creamy.
  3. Mix in the eggs one at a time, beating well after each addition.
  4. Stir in the Mexican vanilla extract until fully incorporated.

2. Combine the Dry and Wet Ingredients:

  1. In a separate bowl, whisk together the flour, baking soda, and baking powder.
  2. Gradually add the dry mixture to the wet mixture, alternating with the sour cream. Begin and end with the flour mixture. Mix just until combined—do not overmix.

3. Chill the Dough:

  • Cover the dough tightly and refrigerate overnight to allow the flavors to develop and make the dough easier to handle.

4. Prepare for Baking:

  1. Preheat your oven to 350°F (175°C).
  2. For cutouts, roll out the chilled dough on a floured surface to about 1/4-inch thickness. Use your favorite cookie cutters to create shapes.
  3. Place cutouts on a parchment-lined baking sheet, spacing them about 1 inch apart.

5. Bake:

  • Bake in the preheated oven for 7 to 9 minutes, or until the edges are set and just starting to turn golden. Do not overbake to keep them soft.
  • Cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.

Optional Variation:
If you’re not making cutouts:

  • Fold in chocolate chips, peanut butter chips, or chopped nuts into the dough.
  • Drop by spoonfuls onto a prepared baking sheet.
  • Bake at 350°F for 8 to 10 minutes until lightly golden.

  • Frost with your favorite royal icing or buttercream.
  • Add sprinkles, edible glitter, or sanding sugar for a festive touch.

Storage:

  • Store cookies in an airtight container at room temperature for up to 5 days.
  • The dough or baked cookies can also be frozen for up to 3 months.
