Cream Cheese & Fruit-Filled French Toast Roll-Ups
Ingredients:
- 6 slices of bread (any type you prefer, like white, whole wheat, or brioche)
- 4 oz cream cheese (softened)
- 2 tablespoons fruit spread (strawberry, raspberry, blueberry, or your favorite)
- 2 eggs
- 1/4 cup milk
- 1/2 teaspoon cinnamon
- Butter for cooking
- Syrup for serving (optional, but recommended)
Instructions:
- Prepare the Bread:
- Take your 6 slices of bread and carefully cut off the crusts. (Save them for a later use like making croutons or a French toast casserole!)
- Using a rolling pin or the flat side of a cup, gently roll out each slice of bread to flatten it. This will make the bread easier to roll up.
- Make the Filling:
- In a small bowl, mix together the softened cream cheese and your favorite fruit spread until smooth and well combined.
- Spread a thin layer of the cream cheese mixture over each slice of flattened bread.
- Roll Them Up:
- Roll each slice of bread tightly, from one end to the other, to create a little roll-up. Set aside.
- Make the Egg Mixture:
- In a shallow dish, whisk together the 2 eggs, 1/4 cup of milk, and 1/2 teaspoon of cinnamon until well combined.
- Cook the Roll-Ups:
- Heat a large pan over medium heat and add a small amount of butter.
- Take each roll-up and dip it into the egg mixture, making sure it’s well-coated, but not too soggy.
- Place the roll-ups in the pan and cook, turning occasionally, until all sides are golden brown and crispy, about 2-3 minutes per side.
