Loaded Cauliflower
Ingredients:
- 1 large head of cauliflower, cut into bite-sized pieces
- 2-3 tablespoons olive oil
- 1 packet ranch seasoning mix (or to taste)
- 4-6 slices bacon
- 1 cup shredded cheddar cheese
- 2-3 tablespoons crumbled bacon (from the cooked bacon)
- Sour cream (for serving, optional)
- Green onions, chopped (for serving, optional)
Instructions:
- Preheat Oven:
- Preheat your oven to 400°F (200°C).
- Prepare Cauliflower:
- Place the cut cauliflower pieces on a sheet tray.
- Drizzle with olive oil and sprinkle with ranch seasoning.
- Toss to coat evenly.
- Cook Bacon:
- Place the bacon slices on another sheet tray.
- Bake in the preheated oven for 15-20 minutes, or until crispy. This makes it easier to crumble.
- Once crispy, remove bacon from the oven and let it cool on paper towels. Crush or crumble into bits when cool enough to handle.
- Roast Cauliflower:
- Place the tray of seasoned cauliflower in the oven.
- Roast for 20-25 minutes, or until the cauliflower is tender and starts to brown.
- Add Cheese and Bacon:
- Sprinkle the shredded cheddar cheese over the roasted cauliflower.
- Add the crumbled bacon bits.
- Return the tray to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let cool slightly.
- Top with sour cream and chopped green onions, if desired.
